Kashmiri Dum Aloo/ Fried Baby Potatoes In A Fragrant Rich Gravy y
Kashmiri cuisine is rich, flavourful and used hot spices to flavour their food.The Kashmiri mostly rely on Non vegetarian food .For vegetarian food they have very few options and mostly eat Lotus stem ,potatoes, Rajma and paneer .Kashmiri cuisine carries a variety of potato dishes and Out of which one most exotic potato curry is 'Kashmiri dum aloo 'which is basically creamy,rich fried potatoes curry or An aromatic curry that is cooked in yogurt and flavoured with Kashmiri spices. This curry is absolutely full of delish flavors,the way actually it should be spicy hot & oh!so heavenly .
It's differ from other because it's no onions and no garlic dish and requires minimum ingredients and it gets its beautiful red colour from Kashmiri red chillies.This dish has everything I mean gorgeous colour piquant flavor,nice aroma and spicy taste actually it carries every flavour very delicately.This kind of dish simply makes me happy.I have often received compliments for this dish and the best one from my husband always 'is this really a potato' well.....What's Make Kashmiri dum aloo so special...It's the way the spices marry the potatoes and leave a trace of spicy romance...Hope you guys love my version of Kashmiri dum aloo...With much love from'Nia mommyfood trail'...
Ingredients:
- Baby potatoes-8to9
- Kashmiri red chillies-2to3
- Tomato purée-1/2 cup
- Yoghurt-1/2 cup
- Chopped coriander leaves-1 ts
Procedure:
- Boil the potatoes in water with salt for sometimes, Then scrape the potatoes, prick all over with a fork .
- Dry the potatoes on a cloth and heat oil in a pan and Deep fry potatoes until it becomes golden brown.Drain the fried potatoes and Setaside.
- Heat oil in another pan,Add bay leaves,dry Kashmiri red chillies,cloves,cardamom,cinnamon sticks ,asafoetida and sauté for a while.Add tomato purée and cook for 4-5 minutes.(optional)Whisk yoghurt with spices (turmeric powder,coriander powder,red chilli powder,salt and Garam masala) and Add to the pan, stir continuously and Add water & bring the mixture to a boil.Add fried baby potatoes and cook till potatoes absorb the gravy.
