Winter is here so it's time to have some winter friendly dishes.What a better way then have Bajra roti with fresh jaggery and homemade butter......Bliss!Another delicious Rajasthani recipe that you may be familiar with or even had,It is called Bajra Ki roti made of pearl millet flour or Bajra flour in Hindi.Thickly rolled soft & scrumptious these Rotis are served with plenty of freshly churned white butter and a piece of jaggery/gur and Lahsun Ki Chutney.These rotis are very frequently & commonly made in my home during winter.But rolling a bajra roti is not as easy as wheat rotis even cooking is also different...It needs to be cooked at a much lower heat to ensure even cooking....For me also it took a lot of trials but now it's wonderful to see the lovely,earthy bajra rotis coming from The tawa and disappeared in the stomach..No dought it's yummy & extremely nutritious as millets are very high on fibres and This is one of the recipe without which a traditional Rajasthani thali is incomplete.So enjoy this heavenly delicious Bajra Ki roti with a dollop of homemade butter....
Ingredients:
- Bajra flour-2 cup
- Lukewarm water
- Ghee-1 ts
- Salt to taste
Procedure:
- First sift the bajra flour and salt in a deep mixing bowl.Knead the dough well with lukewarm water until it comes together in a smooth dough.The dough will be similar to what we prepare for Makke Ki Roti.
- Grease the dough with ghee and let rest for 10 minutes.Heat a tawa over medium heat and take a ball of dough and roll it into a round and thick roti.You can shape the roti by pressing out a circle with your fingers as well.For rolling i used plastic sheets to roll each roti.
- Place the rotis over heated tawa and cook from both sides till brown spots appears.
Serve Bajra roti immediately with white butter.
