Patande Or Himachali Pancakes

Patande is a popular breakfast dish from the Sirmour district of Himchal Pradesh and can be called as Indian Style Pancake because it resembles the dosa but texture wise is more like pancake.It is made with ghee,wheat flour,milk and sugar,Cooked on a hot griddle and look like the conventional hot cake and it is served with apple stew.Patande makes the fantastic passage to the culinary exotica of Himachal Prdesh.It is Himachal own particular adjustment of the established pan cake.


we first time tried this dish In a restaurant in Manali and it was awesome.I have been waiting to make this for long but somehow it was getting postponed.Actually it's not everyday that we eat pancake for breakfast but when we do it means special.I tried this Himachali pancake with Apple stew for the very first time and I must say I was impressed.The fruit pieces melt a little in the pancake which adds a juicy crunch to it,absolutely delicious!I drizzle little bit honey and lot of maple syrup and it was a perfect breakfast.So go ahead and make these Himachali pancake today!


Ingredients:

  1. Whole wheat flour-1 cup
  2. Milk-1 1/2 cup
  3. Baking powder-1/4 ts
  4. Baking soda-1/4 ts
  5. Cinnamon powder-1/4 ts
  6. Sugar-1/2 cup
  7. Cardamom-2

Procedure:

  • Take a mixing bowl,Add whole wheat flour,sugar,baking soda,baking powder,cinnamon powder ,cardamom seeds and milk little by little and whisk well.Adjust consistency with water.Let it rest for 1/2 an hour.


  • Take a nonstick tawa,Add Amul butter and slowly fry the pancakes.

  • Serve hot with apple stew and caramelised apples.
  • Apple stew-: slice the apple and place In a pan with 1/4 cup water and sugar.Give it a stir &cook till apple slices start to dissolves and become fluffy.Leave to cool and then transfer to a bowl.
