Arancini /Cheesy Rice balls

Another beautiful Italian dish and grateway to use leftover Risotto or Rice and fantastic party appetizer.Anarcini are gorgeous  stuffed rice balls in a crispy breadcrumbs coating and a gooey mozzarella centre...Little bites of Italian vegan meatballs but more tender and somehow more delicious.....Perfect balance of creamy and crunchy...Pretty awesome that's why I wanted to make them for myself.I opted for simplicity my first time out but have grand plan for future adventures.Making these lush rice balls at home is quite simple,Not so complicated as it sounds,really very very simple.This dish comes with a delectable flavors,textures and crunchy crispiness so it's always welcome in my family.
These arancini take little bit of work but are worth every ounce of effort.With the cooled rice we formed balls ,create a hole and filled with cheese and packed rice to complete the ball,coat in breadcrumbs and plunge into oil for beautiful crispy texture.The result is crispy savoury ball of goodness with a cheesy centre perfect for dipping into marinara sauce or mustard sauce.These make the perfect side dish for Italian night or when you want a hearty snack.Try these cheesy rice balls and tell me what you think....

Ingredients:

  1. Boiled Rice -1 cup
  2. Potato-1 med size
  3. Chopped green chilli-1 ts
  4. Bread crumbs-1/2 cup
  5. All purpose flour-2 ts

Procedure:

  • To assemble rice balls, simply place the cooked rice,all purpose flour,boiled potato chopped green chilli,ginger ,spices,oregano,black pepper and salt in a large bowl.
  • Mix together throughly and set aside.Cut mozzarella cheese into 1/2 inch cubes and create a hole and press on cheese cube into the holes.Use your hands to gently round the rice balls covering the little cheese inside.
  • Toss each rice balls gently in breadcrumbs to fully coat the exterior.
  • Heat oil in a pan and add 3-4 rice balls at a time and fry until golden brown all over and drain on an absorbent paper.
  • Serve hot with vege mayones or mustard sauce or marinara sauce.
