Today I am sharing absolutely delicious,light on stomach very tempting snack dish known as Khandvi.It isa mouthwatering traditional Gujarati snack and primarily made of gram flour and yogurt.The texture is really soft silky with hint of sour taste which comes from sour yogurt.Making Khandvi at home is really a little tricky.Getting perfect Khandvi can take a bit of practice.
Gram flour and yogurt flavoured with green chilli are cooked into a lump free mixture smeared on a greased surface,rolled into a pinwheel ,Then tempered with mustard seeds,fresh coriander and coconut.No one can deny that it is a different item to prepare.Be patients and remember to cook the paste slowly and completely thick.So try yourself and relish the superbly delicious Khandvi......
Ingredients:
- Gram flour-1 cup
- Curd-1 cup
- Water-1.5 cup
- Mustard seeds-1/2 ts
- Green chilli-1finely chopped
- Desiccated coconut-1 ts
- Chopped Coriander leaves-1 ts
- Sugar-1 ts
Procedure:
- Take water in a bowl and curd & blend it.Add gram flour,sugar ,salt and chopped green chilli and whisk properly.
- In a pan pour the batter and cook on medium heat for 8-10 minutes or while batter start separating from the pan.
- Spread the batter on greased surface and allow it to cool properly.
Cut strips of Khandvi and make Roll.
- For tempering,Heat oil in a pan,add mustard seeds,when seeds began to pop Add 1/2 ts of lemon juice and Switchoff the flame.
- Spread the tempering on Khandvi and garnish with chopped coriander leaves and desiccated coconut and serve hot.
