Kairi Ki Launji Or Raw Mango in Sweet & Sour Mix

Kairi Ki Launji is an instant pickle from Rajasthan,Flavoured with chilli and exotic spices such as Kalonji,Saunf,Mustard Seeds and Dana Methi that perks up any meal with its sweet n sour magic.It is a summer special when raw mangoes are in season and this too is made to shield your body from the intense heat in the desert.
This is my childhood relish and I always loved the way my mommy made this Launji  so here's presenting simple and unpredictable,flavoursome Kairi launji inspired by my mum....Made with tons of old & new wonderful memories.That are lying in bottles marked with smiling faces in the kitchen of my heart & Hope so you guys also like this yummiest launji:)



 Ingredients:

  1. Kairi-2 cup
  2. Kalonji ( nigella seeds)-1 ts
  3. Saunf /Fennel Seeds-1 ts
  4. Mustard seeds-1/2ts
  5. Dana Methi/Fenugreek seeds-1/2 ts
  6. Red chilli powder-1ts
  7. Jaggery-1 1/2 pieces 
  8. Garam masala -1/2 ts

Procedure:

  • Heat oil in a pan and add kalonji, fennel seeds,mustard seeds and dana Methi .When seeds began to pop,Add chopped kairi and mix well.
  • Then add spices (turmeric powder,salt,red chilli powder, coriander powder) and sauté for 2-3 minutes.Add 1/2 cup water and cover pan with a lid and let it simmer till kairi are cooked.Add crushed jaggery and Garam masala to it and cook till jaggery is nicely dissolved.Make sure Launji is not runny because it is not a gravy curry or neither a complete dry curry.It is somewhere in  between.
  • Turn off the gas and serve it with roti / paratha.This Launji can be stored in airtight container for 4-5 days.
