LemonLime Vegan Coconut Cake is a simple,old fashioned,bakery style,heavy,fluffy,rich and moist cake.When I make spread of desserts,this cake is first to go because it comes out beautiful and it has the most amazing inviting aroma.So I was trying to resist biting into it because frankly in my opinion there is nothing better than biting into cake that has just comes out of the oven,it's heaven in a bite.My secret of making this amazing cake is infect lemon lime combo.Yep,that's the whole trick to making it fluffy without an egg.An acid base reaction wonder's you all!!So go ahead give this traditional cake a try & amaze your family and friends!!!
Ingredients:
All purpose flour-1.5 cup
Baking soda-1/2 ts
Baking powder-1 1/2 ts
Curd -1 cup
Veg oil or coconut oil-1/2 cup
Sugar-3/4 cup
Vanilla essence -1 ts
Shredded coconut-1/2 cup
Lime juice-1 ts
Procedure:
Preheat oven to 180'c and grease a cake tin.
Mix all dry ingredients all purpose flour,baking powder,baking soda and salt in a bowl.
In another bowl mix curd with sugar,coconut oil,lime juice and vanilla extract.
Combine wet ingredients to dry ingredients and slowly mix.Fold in shredded coconut but don't over mix.
Gently pour this in greased cake tin and bake for 25-30 minutes.
Remove and let cool.
For frosting: Take coconut cream or whipped cream in a bowl.Add sugar & vanilla essence Beat until fluffy & smooth.Frost your cooled cake and add shredded coconut on top and also lime zest if desired.
