Methi Ki Launji

Yet another nostalgic time for me because This time i am sharing another exotic curry 'Methi Ki Launji 'from my hometown which would cheers you guys ........Something so simple and delicious and serve this with hot Paratha and whatever you wish like rotis...I love cooking but I love Nostalgic cooking even more.Anyways it's really very easy and a common affair in my kitchen . Methi launji is a traditional Rajasthani recipe and also known as sweet fenugreek pickle and it's a bitter,sweeet and spicy curry !!!
Methi seeds have a very sharp,bitter and pungent flavour so it is very important to soak them and wash them well to get rid of yellow water and bitter taste.My Mom tips that work everytime for me is to soak the seed in lukewarm water and don't touch the seeds while soaking and washing them throughly in a colander.This launji can be stored easily for a week.This is a must try for anyone and everyone So go ahead make this delicious curry.Here's how:



Ingredients:

  1. Methi(fenugreek seeds )-1/2cup
  2. Jaggery-1/2cup
  3. Dry red chillies-2
  4. Oil-1ts
  5. Soaked raisins-9-10
  6. Chopped dates-1/8cup

Procedure:

  • Clean and wash methi throughly and soak in water for 4-5 hours. Drain it with a sieve and keep aside.
  • Heat oil in a pressure cooker and add cumin seeds,asafoetida and dry red chillies.When seeds began to crackle Add drained methi and sauté.
  • Add jagggery,soaked raisins,chopped dates and mix well.
  •  Then add coriander powder, red chilli powder ,salt and dry mango powder and 1/2cup water.Pressure cook for 1whistle.Allow the steam to escape before opening the lid.
  • Then cook on gas till launji get thic and dense in consistency.Turn off the flame and allow it to cool.
