Masala Lachha Paratha/Multi Layered paratha
Lachha Paratha is multilayered shallow fried Northindian flat bread and made by pleating and disc and again rolled, by this way layers are formed,when cooked becomes more visible.It's also called as paratwala paratha and In punjabi Parat means layers.I have made Basic version of lachha Paratha using wheat flour with some spices but you can also make it by using all purpose flour and wheat flour in equal proportions and add some flavour like mint,spinach.I love the texture of Paratha so crispy and flaky.....bathed in butter but amazingly delicious.....looks like pinwheel cookie...when you start eating it will melt in your mouth and you feel that layers are coming off one by another.....Enjoy this superbly yummy Paratha..
Ingredients:
- Whole wheat flour-2cup
- Ghee-2-3ts
- Salt to taste
- Red chilli powder-1/4 ts
- Carom seeds-1ts
- Garam masala-1/4 ts
Procedure:
- Combine wheat flour, 1ts ghee, salt,red chilli powder,carom seeds,Garam masala in a bowl and add water according to need.Knead a stiff and smooth dough.
- Take a medium size ball of the dough and roll it on a rolling pin.
- Apply ghee on the paratha.From the egged start to fold and pleat the paratha till the end.
- Roll the pleated edges and join the edges.
- Now roll into round paratha.
- Heat the tawa on gas and place the paratha on tawa.Apply ghee on the paratha and turn when one side is partly cooked.
- Appply gheee and flip again till the paratha are browned and well coooked.
- Serve lachha paratha drizzle with butter with any curry or dal.
