Lychee Phirni/ Lychee flavoured Rice Pudding

When the summer starts warming up,I love to make cool dessert.So today recipe is perfect for hot summer days.A bowl of chilled Phirni is like a breath of cool & fresh air........Lustrous,Rich,Creamy velvety sugary goodness,Smooth and flavorful with the aroma of Lychee and the creaminess of rice and milk.......Soothing and refreshing....Phirni is made with ground rice cooked in milk,simmered and reduced till thick and creamy with care on low flame then sweetened and flavoured and its magic to see rice & milk come together in such union.
I love playing with flavours so I decided to put a twist on traditional Phirni and Add chopped Lychee to my Phirni....Incredibly flavorful and fragrant pot of rice,Its actually one of the easiest dessert to make and you must have this in your repertoire....Take a note of  this recipe and let me know how it turned out with your wonderful comments:)With lots of love from "Nia mommy food trail"...

Ingredients:

  1. Whole milk-1 litre
  2. Lychee-1 cup puréed 
  3. Sugar-1/2 cup
  4. Rice-3 ts
  5. Nuts and sliced Lychee for garnish 

Procedure:

  • Soak rice for 1/2 an hour and grind in a mixie by adding little water till smooth.
  • Put milk to boil in a large vessels.when boiled simmered and reduced for 10-15 minutes,Add rice paste while stirring continuously and simmer on low flame till mixture is little thick.
  • Add Lychee purée and cook for 4-5 minutes and Add cardamom powder and sugar and stir continuously for some time.
  • Switchoff the flame and cool to room temperature
    and chill in the refrigerator for 2-3 hours.
  • Garnish with chopped nuts and Sliced Lychee and serve chillled.
