It's Apple Muffins time and These Muffins are light,fluffy and filled with sweet apples and a crunchy & delicious topping....Just damn good that you definitely need to make these Muffins and Once baked the apple becomes gooeyand melt into the batter which gives a nice contrast to the crumbly streusel topping.I always thought Muffins are oversized cupcakes & never thought deeply about it and I figured it is a good excuse to eat cake for breakfast:)I really liked these muffins denser but soft too with enough sweetness.I hope you guys give this recipe a try and like it too....with much love from"Nia's mommy food trail".......
Ingredients:
- Whole wheat flour-1 cup
- All purpose flour-1 cup
- Baking powder-1 ts
- Salt-1/4 ts
- Sugar-3/4 cup
- Oil or Butter-1/2 cup
- Curd -2ts
- Buttermilk-1 cup
- Milk-1 cup
- Vanilla essence-1 ts
- Finely Chopped apples-2 cup
- Handful of raisins
- Oats -1/4 cup
- Brown sugar-1 ts
- Cinnamon powder-1 ts
Procedure:
- Preheat the oven to 190'c and Line a Muffins tray with muffins liner and grease it with oil or butter.
- Take all dry ingredients whole wheat flour,All purpose flour,Baking powder,Salt and Sugar in a bowl and mix well.
- In another bowl take all wet ingredients Oil,Buttermilk mixture (Mix buttermilk with 1ts of lemon juice and 1 cup of milk and let it stand for 10 minutes) Curd ,vanilla essence and whisk well.
- Now add dry ingredients to wet ingredients and whisk with spatula.Add diced apples and raisins and mix well.
Pour the batter into muffins tray.
- For topping take oats,brown sugar,cinnamon powder and olive oil in a small bowl and sprinkle this topping over muffins batter before baking.
- Bake for 20 minutes and Then cool for 5 minutes and then remove ad serve .
