It's Apple Muffins time and These Muffins are light,fluffy and filled with sweet apples and a crunchy & delicious topping....Just damn good that you definitely need to make these Muffins and Once baked the apple becomes gooeyand melt into the batter which gives a nice contrast to the crumbly streusel topping.I always thought Muffins are oversized cupcakes & never thought deeply about it and I figured it is a good excuse to eat cake for breakfast:)I really liked these muffins denser but soft too with enough sweetness.I hope you guys give this recipe a try and like it too....with much love from"Nia's mommy food trail".......
Ingredients:
Whole wheat flour-1 cup
All purpose flour-1 cup
Baking powder-1 ts
Salt-1/4 ts
Sugar-3/4 cup
Oil or Butter-1/2 cup
Curd -2ts
Buttermilk-1 cup
Milk-1 cup
Vanilla essence-1 ts
Finely Chopped apples-2 cup
Handful of raisins
Oats -1/4 cup
Brown sugar-1 ts
Cinnamon powder-1 ts
Procedure:
Preheat the oven to 190'c and Line a Muffins tray with muffins liner and grease it with oil or butter.
Take all dry ingredients whole wheat flour,All purpose flour,Baking powder,Salt and Sugar in a bowl and mix well.
In another bowl take all wet ingredients Oil,Buttermilk mixture (Mix buttermilk with 1ts of lemon juice and 1 cup of milk and let it stand for 10 minutes) Curd ,vanilla essence and whisk well.
Now add dry ingredients to wet ingredients and whisk with spatula.Add diced apples and raisins and mix well.
Pour the batter into muffins tray.
For topping take oats,brown sugar,cinnamon powder and olive oil in a small bowl and sprinkle this topping over muffins batter before baking.
Bake for 20 minutes and Then cool for 5 minutes and then remove ad serve .
