Spiced Pumpkin Cupcakes With Cream Cheese Frosting
It is one of the rare cake that gives you the possibility of being super good and kept things truly healthy or be totally naughty.It literally explodes with flavor,It's exquisitely sweet spicedand it's perfectly moist and tender and it harbour such a generous amount of all spices nutmeg,cinnamon that I named it spiced pumpkin cupcakes.I love love the versatility that pumpkin cake has offer....a lot of fabulous pumpkin flavor with some subtle spices....throw a dollop of cream cheese on top and drizzle some caramel sauce..The combo of pumpkin and caramel goes together so wonderfully.......you have one ulterly fantastic dessert I am sure you will absolutely love these cupcakes....
Ingredients:
- All purpose flour-1 3/4 cup
- Baking powder-1 ts
- Baking soda-1 ts
- Salt-1/4 ts
- Cinnamon powder-1/2 ts
- Nutmeg powder-1/2 ts
- Raisins-1/4 cup
- Pumpkin purée-1 cup
- Veg oil-1/2 cup
- Milk-1 cup
- Curd -1 ts
- Pinch of ground cloves
- Sugar-1 cup
Procedure:
- Preheat oven to 190'c and grease and lines a muffins pan and set aside.
- In a large bowl whisk together the flour,baking powder,baking soda,salt,cinnamon powder nutmeg powder and ground cloves and set aside.
- To make pumpkin puree, cook 1 cup chopped pumpkin with some water until soften,blend them to a smooth and thick purée.
- In another bowl whisk together pumpkin purée ,sugar,curd and veg oil until completely combined,slowly add milk and whisk.Make sure there should be no lumps.
- Add the dry mixture into this and combine well,also add raisins.Pour this batter into muffins tin
and bake for 25-30 minutes.Allow to cool completely.
- For frosting,Beat the butter ,cream cheese and vanilla essence until fluffy.Add the powdered Sugar and mix until smooth and well combined.Using a piping bag frost the cupcakes and drizzle some caramel sauce and enjoyyyy...
