Spanakopita/Greek spinach pie

Today I am sharing my family favourite 'Spanakopita'  or Awesome crunchy pie with green stuff inside.It is One of the most popular Greek dish,A very versatile and delicious crispy phyllo pie and one of my favourite Greek comfort food.The traditional filling comprises chopped spinach,feta cheese onions and seasoning.
To make spanakopita feta cheese is crumbled and mixed with spinach into a herby spinach feta mixture and then wrapped into phyllo pastry brushed with melted butter and baked till golden crisp.......simply delicious and awesome crunchy pie with green stuff inside.Give a try this classic spanakopita and enjoy the crunchy & yummy pie.....

Ingredients:

  1. Spinach rinse and chopped-1 cup
  2. Chopped parsley-1/2 cup 
  3. Ricotta cheese-1/2 cup crumbled 
  4. Feta cheese-1/2 cup
  5. Readymade Phyllo pastry-9 sheets 
  6. Melted butter-1/2 cup

Procedure:

  • Heat a pan over medium heat and add a handful of spinach and cook until spinach is wilted.Transfer the spinach to a colander and Let cool slightly and drain completely and also squeeze with your palms.
  • Mix spinach with cheese,parsley,black pepper,salt and nutmeg powder throughly.
  • Greased the baking pan with some oil and preheat the oven to 180'c.Lay 1sheet of phyllo pastry in prepared baking tinand brush with melted butter and repeat process with 7 more sheets of phyllo.
  • Spread spinach cheese mixture evenly over the last layer
    and repeat the oiling and layering of the Phyllo sheets over the filling in the same way you layered previous 8 sheets and bake for 25-30 minutes till its golden brown.
  • Let it cool for some time  and cut into squares and serve .
