Rajasthani Lapsi / Broken Wheat Pudding
I cook food that i love,I cook food that excites me,Icook food from my memories with love ,One such gem of a memory is my grandma's Lapsi.You might heard about Lapsi,A delightful and lipsmaking Rajasthani dessert that will fill your stomach and satisfy your senses at the same time and it is prepared from broken wheat,jaggeryand ghee,This combo together gives nice rich taste and moist texture to the dessert.As I said I have a childhood memory of my Nani making Lapsi,Yes!I first encountered with this rich and delicious dessert at my Nani's house.Since then I have been dying to get that flavor and taste that my Nani used to offer us.
Now when I thought of making this dessert there were lots of thought to recreate the Nani's magic...For this recipe of Lapsi I have added warm jaggery water and I have also added lots of almonds with raisins and dash of vanilla with the cardamoms.. I hope you enjoy my version of Lapsi....You can make this as a special treat for just about any special occasion or simply because you want to have something yum just for your own sake!
Ingredients:
- Broken wheat/Dalia-1 cup
- Jaggery-1/2 cup
- Cardamom -2
- Water-3 cup
- Ghee-3 ts
- Raisins-handful
- Almonds-10to15
- Dash of vanilla
Procedure:
- Heat a pressure cooker over low flame and add ghee into it.When ghee melts,Add cardamom and Daliya and roast it on low flame until it turns slightly brown.
- In a separate pan,Add jaggerywith 3 cup water and boil till jaggery melts and filter it to remove impurities.
- Slowly add jaggerywater to roasted daliya ,dash of vanilla and close the cooker and cook it for 3-4 whistle.
- Garnish with soaked raisins and chopped almonds and serve hot.
