Kamal Kakdi Ki Sabzi / Lotus Stem Stir Fry
Lotus stem also known as Bhein or Kamal Kakdi in Hindi is full of nutrients and one of the authentic Punjabi dish.The lotus stem are mild with a great texture.It does not really have a flavor of its own but takes on the flavours of the spices and yet maintain its individuality.It is a dry vegetarian side dish and it doesn't take much time and effort and It wonderfully goes well with roti or Paratha.
Let me tell you one thing Although this is a simple curry but tastes heavenly with roti,So if you are looking for some different taste in the vegetables then make this curry .One should try this at least once and I promise you'll like it.
Ingredients:
- Lotus stem-2to3
- Chopped coriander leaves-1 ts
- Garam masala-1 ts
- Dry mango powder -1/2 TCS
Procedure:
- Wash and peel the lotus stem throughly,then cut into slanting or round slices and pressure cook them with some salt and water till 2 whistles.
- Take out lotus stem from cooker and drain in a colander.
- Take oil in a deep pan,add mustard seeds cumin seeds and fenugreek seeds.When seeds began to pop,Add spices (red chilli powder coriander powder ,turmeric powder and salt)with some water and cook till oil separates from sides.
- Add boiled lotus stem and sauté for 4-5 minutes.Add Garam masala and dry mango powder and sauté for a while.
- Switchoff the flame and Garnish with chopped coriander leaves and serve hot.
