Cheesy Vegan Lasagna

Lasagna are wide flat shaped pasta and possibly one of the oldest types of pasta.Lasagna commonly referred to a dish made with several layers of lasagna sheets alternated with sauces and other ingredients like cheese and It is really a labour of love.My version is traditional Italian Lasagna,made the Italian way with the layers of sauces and cheese and this makes a delicious,savoury,flavorful family meal,Though patience is required.This is the best vegan lasagna and I am so excited to share it with you guys.

You alternatively stir your white sauce so that it becomes creamy without any lumps cook the veggies,make the red sauce and then layer it and bake it until it is ready but I promise you ,it's worth it.Lasagna is firm favourite at my home and this is nutritious,healthy and also delicious dish that will never let you down,yet it's wonderfully satisfying.If you have never tried a homemade lasagna that's need to change.Do try this awesome lasagna at your home and enjoy....

Ingredients:

  1. Lasagna Noodles-10 
  2. Parmesan cheese-50 gm 
  3. Mozzarella cheese-50 gm 
  4. Ricotta cheese-50 gm
  5. Butter-2 ts
  6. All purpose flour-1/4 cup
  7. Milk-1 cup
  8. Oregano-2 ts
  9. Red chilli flakes-2 ts
  10. Chopped veggies of your choices 
  11. Red sauce/pizza sauce-1 cup

Procedure:

  • Bring a large pot of salted water with 1ts olive oil to the boil and cook lasagna noodles for 5-10 minutes.
    Drain then lay flat on a sheet of aluminium foil.
  • Heat olive oil in a pan and add chopped onions and fry till golden brown.Add chopped mushrooms ,broccoli,bell pepper and spinach and cook for 10-15 minutes.Add red chilli flakes,oregano,salt,black pepper and basil leaves.
  • Heat butter in a pan over medium heat.Add flour and cook stirring continuously,slowly drizzle in milk and continue to cook until mixture becomes thickens and season to taste with salt & pepper.
  • Preheat the oven to 175'cand spread red sauce into the bottom of greased baking dish,Place lasagna noodles,Cover it with roasted veggies then spread white sauce & add grated cheese,Sprinkle red chilli flakes and oregano.Repeat layers 2more time beginnings with lasagna noodles then red sauce then veggies..
  • Bake for 25-30 minutes and serve hot.
