This is my favourite carrot cake recipe and it is full of flavour and moist enticingly and has a spiced & nutty touch.It's soft yet dense,bursted with shredded carrots and toasted with walnuts,it's a total classic. Just try this classic cake timely before the winters end & the season of yummy juicy carrots gets over and I m sure you will make it a permanent addition to your collection!!
Ingredients:
All purpose flour -1cup
Baking powder-1 ts
Baking soda-1/2 ts
Pinch of salt
Grated carrot-1 cup
Yoghurt-1/2 cup
Veg oil-1/2 cop
Sugar-2/3 cup
Milk-2 ts
Walnuts- handful
Vanilla essence-1 ts
Cinnamon powder-1 ts
Nutmeg powder-1 ts
Procedure:
Preheat the oven to 180'cand grease the cake tin.
In a wide bowl mix all dry ingredients except sugar.
In another bowl mix yoghurt with sugar and Add veg oil & vanilla essence.
Mix dry ingredients in this mixture.fold with grated carrots and walnuts and stir in cinnamon powder and nutmeg powder .
Pour this batter into prepared pan and bake for 20-25 minutes.Let it cool completely and serve and enjoy!!!
