One of my favourite fasting food is sabudana or sago or tapioca pearls.These brittle-looking bright white pearls are gluten free and I always have them in my kitchen because they can be turned into some of the tastiest treats you can imagine including a sweet pudding and khichadi.Sago fritters or Sabudana vada are filling & nutritious snack and often served with green chutney.I was a little surprised myself by how perfect these fritters turned out and they were crispy on the outside & gooey and soft from inside.So be sure to prepare enough,as the crunchy and melt in mouth vada will vanish in no minutes,leaving to crave for more:)
Ingredients:
Sabudana-1 1/2 cup
Potato-1 big
Peanuts roasted-1/4 cup
Coriander leaves-1 ts
Green chillies-1 ts
Roasted cumin powder-1/2 ts
Chaat masala-1/2 ts
Corn flour-2 ts
Procedure:
Soak the sabudana in just enough water for 5-6 hours.
Boil,peel & mash potatoes.
Take roasted peanuts and grind it to a coarse powder.
Take soaked sabudana in a bowl & mix with chopped coriander leaves and chopped green chillies ,mashed potatoes ,salt ,chaat masala roasted cumin powder and little bit of red chilli powder.Add corn flour to bind the mixture.
Make small balls with this mixture and flatten them a bit and deep fry in hot oil till golden brown from both sides.
Drain on an absorbent paper and serve hot with green chutney.Enjoy the yummy crispy snacks:)
