Australian Lamington Cake

Lamington cake is an Australian dessert and made with little cubes of sponge cake filled with raspberry jam dipped in chocolate then rolled in shredded coconut.The word lamington means beaten gold.I have added a delightful twist to the much loved Australian dessert,I dipped sponge cake in pinkish strawberry jam and the results were indeed fabulous & it looked fancy & attractive.The good news is that I don't feel slighted anymore since I have lamington whenever I want & so you can.

Ingredients:

  1. All purpose flour-1 cup
  2. Corn starch-2 ts
  3. Sugar-1/2 cup
  4. Veg oil -1/4 cup
  5. Milk-3/4 cup
  6. Vanilla essence-1 ts
  7. Baking soda -1/4 ts
  8. Baking powder-1 ts
  9. Vinegar-1/2 ts
  10. Pinch of salt 
  11. Strawberry jam-1 cup
  12. Shredded coconut-1cup

Procedure: 


  •  Preheat the oven at 180'c and grease the cake tin.
  • Combine all purpose flour, corn starch ,baking powder,baking soda & pinch of salt in a mixing bowl.
  • In another bowl whisk vinegar with milk & let it rest for 5 minutes.Then combine with veg oil& Vanilla essence and mix well.
  • Slowly add dry ingredients to it & gently mix.
  • Pour this batter into greased cake tin and bake for 20-25 minutes.
  • Let it cool completely and cut into neat square cubes.
  • Dip the cake pieces into strawberry jam
    and transfer to a bowl of shredded coconut & roll it.
  • Place them on a serving plate and refrigerate for 1/2 an hour and serve chillled.
  • Enjoy the pinkish lamington cake with your friends and family.
