Bathue Ka Raita is a side dish made by mixing ground chenopodium leaves in beaten curd..Raita is a favourite at my place.My family loves prefer Raita then eating just plain yoghurt so I often makes different Raita to serve along with parathas. During winter I make this Raita quite often because it is rich in iron so improves haemoglobin level.
Ingredients:
- Bathua/chenopodium leaves-1 cup
- Yoghurt/curd-2 cup
- Cumin seeds-1/4ts
- Chopped green chillies-1 ts
- Salt to taste
Procedure:
- Pluck the leaves of bathua and wash them well. Boil them in enough water till they become soft. Refresh in cold water.
- Take yoghurt in a bowl and whisk it well.
- Add salt,black salt & bathua leaves and mix it well and add little water to adjust the consistency.
- Heat oil in a pan,add cumin seeds .When seeds began to crackle ,Add chopped green chillies and sauté for a while and immediately pour this over prepared Raita.
- Mix and served chilled.
