Mom's Gujiya

Today I am going to share one of my mom's recipe 'Rajasthani mawa Gujiya'with you.A recipe that reminds me of my family,A heriloom recipe that comes to me all the way traveling from my mom to me.It was a difficult choice because My mom is one of the finest cook ever,She adds some magic to the simplest of the preparation that leaves you with the exceptional taste forever  and we usually go Gaga over everything she makes. Gujiya is common in north India and native to Rajasthan.....
.Gujiya is traditional sweet dumpling made with all purpose flour or wheat flour and stuffed with khoya or mawa.Gujiya's outer layer is crispy but the stuffing is very rich and sweet that's the reason it is made only during the festival Holi as well as Diwali or special occasion in Rajasthan. Actually festival without Gujiya feels incomplete and Different type of gujiyas are prepared on the festivals...
At my home festival is just an excuse to make these....festive time I miss home the most,The get together,the energy the enthusiasm in the air,variety of food....What I miss most is my mom made Gujiya...Soft crunchy,smell so heavenly and tastes much better when served hot....My belief that Moms are the best cook of the world because they don't only cook gourmet food but they make simple food to gourmet food andMy mom makes bestest Gujiya and this is her signature  recipe I am sharing with you guys !!These can b little tricky to make but don't worry ,just follow the recipe and it will be sorted.....



Ingredients:

  1. All purpose flour-1cup
  2. Mawa or khoya -1/2 cup
  3. Desiccated coconut-1Ts
  4. Cardamom powder-1/4ts 
  5. Sugar-1/3 cup
  6. Nuts-1/4 cup
  7. Oil for frying

Procedure:

  • Heat the mawa in a pan on medium heat and cook till it becomes light brown in colour.Add cardamom powder to this and sauté . Switchoff the flame and keep aside.
  • While mawa is cooling, mix all purpose flour and a pinch of salt and 3 ts sugar. Drizzle 2ts ghee and rub it into flour using your fingertips.start adding little warm water and knead into stiff and smooth dough.Cover it and let it rest for15 minutes.
  • Add powdered sugar,desiccated coconut  and raisins and chopped nuts to the mawa mixture.mix it well.
  • Now start shaping the Gujiya: knead the dough once again and take a small ball of dough and roll on the rolling pin.Put about a teaspoon of stuffing in the centre .To seal use Gujiya mould
  • Deep fry in hot oil till golden brown.
  • Make sugar syrup by cooking sugar and little water together till one thread consistency.
  • Deep the Gujiya in it,lift and let dry on a plate.
  • Gujiya can be stored in airtight containers.
