Bachpan Ki Yaade Kesaria Meethe Chawal or Sweet Yellow Rice

Whenever I post a Rajasthani dish on my blog there's a sense of satisfaction and pride which engulfs me.....Meethe chawal is a traditional dish of Rajasthan and It is a sweet and rich rice preparation loaded with dry fruits ,sugar and ghee. It is similar to Zarda pulao that is traditional Muslim rice preparation,The word Zarda comes from Urdu which means Yellow in colour.In this dish a good quantity of Saffron strands is added which gives it beautiful yellow colour,aroma and flavor so its name as Kesaria Bhaat.
During my childhood days whenever we visited my Nani house she always made this  world famous Kesaria Bhaat with lots of ghee,saffron & love :) it was yumm & best dessert of my life....Every summer vacation when we used to visit our Nani's house special treat we're waiting for us......Wowwww is the word for those days,No study top it up with gifts,Funtime with your cousins and sweet treats made with so much love....There is really nothing that beat the love of your Nani,The affection,the pampering,sleeping on her lap,those things haunt me even today...it was one such day that made me touchy.... This is my Nani signature dish and I tried to recreate the magic on her way...


Ingredients:

  1. Rice -1 cup 
  2. Sugar-1/2 cup 
  3. Ghee-3 ts
  4. Dry fruits-1/2 cup
  5. Saffron strands-7-8
  6. Raisins and chopped nuts 

Procedure:

  • Soak saffron in lukewarm water and keep aside.
  • Boil rice with 2 cup water in a pan on medium heat and transfer it to a colander and drain water completely.
  • Heat ghee in a pan ,Add cinnamon sticks,cloves and green cardamom and sauté for 1-2 minutes.
  • Add sugar with 1/4 cup water and saffron threads ,Stir and cook for a minute.
  • Add boiled rice.Mix gently until each rice is coated with mixture.
  • Switchoff the flame and garnish with chopped nuts and raisins.
