Mumbai Style Pav Bhaji

Everyone's favourite.....Pav-Bhaji!!

If you are a foodie and knows about Indian street food then you are sure to know one of the most famous street food of Mumbai'Pav-Bhaji'.Now a days  it's popular in India any city if you go you will find Pav-Bhaji,It has made its way to the all across in India Although its most famous in Mumbai.Its super tasty,hassle free and filling dish and spicy enough to satiate the Indian palate always lusting after the spice kick and made with mishmash of vegetables cooked in spices with dolloped butter and served with Pav or buns  of course toasted in butter.
The boiled and mashed vegetables gives it a smooth yet chunky texture while specially pav bhaji masala gives it a irresistible,mouthwatering aromaand taste. Pav bhaji has many variations in ingredients but essentially a spiced mixture of mashed vegetables cooked with fragrant spices that taste like heaven on a flat griddle or a Tawa and served hot with a buttered soft Pav and will make your kitchen smell like an Indian market.

Over all pav bhaji when served with chopped onions ,butter,green chilli with a dash of lemon is something to die for....yummm!For the bhaji you can use your own proportions of vegetables and masala. The pav-Bhaji masala is key here so you have to use a good pav-bhaji masala like MDH.The another key trick is soaking the Kashmiri red chilli in hot water then grind with cloves of garlic to give the bright red colour.In this recipe i have added ginger,a lot of vegetables and red chillies to bhaji.I try to make it whenever I have a lot of fresh veggies in my fridge.I typically don't like the Pavbhaji serve at Indian restaurant either too bland,missing some ingredients and vegetables.That's why I love my version of Pavbhaji yummy to taste and Super easy to make and I have tried this version many times and it's tasted just as good.So here's my recipe for making  this Mumbai style Pavbhaji at home....


Ingredients:


  1. Potatoes-2 medium size 
  2. Veggies- carrots,cauliflower,cabbage,egg plant,green beans,reddish ,capsicum 
  3. Tomatoes-2to3
  4. Onion-1large size
  5. Garlic cloves-4-6
  6. Grated ginger-1 ts
  7. Lemon juice-2 ts
  8. Chopped coriander leaves-1/4 cup
  9. Butter-2ts
  10. Pav or buns -1 pack
  11. Pav bhaji masala -1 ts

Procedure:

  • Cut all the veggies then Pressure cook potatoes,all the veggies ,chopped ginger and green chillies with salt and 1/2 cup of water for 2-3 whistles until it cooked.Mash well and Setaside.
  • Heat oil in a pan ,add mustard seeds and when seeds began to pop Add onion purée and sauté till turn brown in colour.Add Tomato pure and peas and sauté until softens.

  • Then add mashed vegetables and mix well and cook.Add spices ( red chilli powder,turmeric powder,Pav bhaji masala and salt).
  • Cover with a lid and cook for 10-15 minutes.Open and cook further until it get desired consistency.Add butter and mix well.Switchoff the flame.
  • Garnish with chopped coriander leaves and chopped onion and some lemon juice.Butter the pav generously and toast until golden brown on a tawa.
  • Serve butter roasted pav with bhaji and lemon wedges.
