Curd Rice

It's amazing how one basic ingredient 'rice'is prepared in so many different ways across the India.Actually, One can write a book on just rice dishes in India and I'm sure there are many.Rice finds its way onto everyone plate from humble steamed rice to the Biryani.Curd rice is popular in the southern part of the India and In South Indian home It is standard to eat curd rice at the end of lunch and dinner which helps ease the effect of spicy meal and also good for digestion.It not only a good option for those days when you don't want to cook but It's also good for those days when weather is hot or your stomach hasn't been well .For making curd rice first rice is boiled then mix with curd or yogurt then tempered with mustard seeds,curry leaves peanuts,dry red chilli and garnish with your favourite fruit and raisins.Let me tell you a little funny incident,how this divine rice happened in my kitchen.Few years back I had a get together at my home with some of common friends that day I made Rajasthani meal,our very good South Indian friend also come to that party  & at the end of dinner he asked for curd rice and I simply gave him plain curd & rice as I am from north India & that time I didn't know what's curd rice ? He looked at my face & gave me a strange smile!!After that I discovered this amazing recipe of making curd rice Since then I developed a strong liking towards this easy to make and delicious South Indian curd rice.


Ingredients:

  1. Boiled rice-1 cup
  2. Curd-1/2 cup
  3. Milk-1/4 cup
  4. Chopped green chillies-1/2 ts
  5. Chopped mint leaves-1 ts

Procedure:

  • Heat oil in a pan,Add mustard seeds when seeds pop, Add Channa dal,hing ,whole dry red chillies and sauté for a while.
  • Add chopped green chillies,peanuts and salt ,Fry for few minutes and turn off heat.
  • Mix curd with milk and beat well.Add tempered spices into the curd mixture.
  • Add boiled rice to this and mix well with a fork and garnish with chopped mint leaves and serve .
