Lemon Rice

Lemon rice is a easy,quick and tasty South Indian rice dish  made with lemon juice and little spices and tempered with mustard seeds and curry leaves ,peanuts with hints of smoky chilli..I was never a big rice eater while growing up in Rajasthan but I do love it now partly because of ease of cooking it So I make rice as a quick fix when I feel lazy and don't feel like cooking much because its so easy and so simple and you can simply enjoy this with plain yogurt or you can eat it plain straight out of the pot!Lemon rice is something very easy and so good and can be made with just a few basic steps,So I make it very often .Nutty crunchy mouthfeel and the colour Sunny beautiful like sunshine on a plate and deliciou.....mmmmmm....Actually its a vibrant platter full of good health and deliciousness.Make this for lunch or dinner and enjoy this heavenly meal....

Ingredients:

  1. Boiled Rice-1cup
  2. Lemon juice-1/4cup
  3. Peanuts-1/8cup
  4.  Dry red chillies-2
  5. Curry leaves -1ts chopped 

Procedure:

  • Keep all the ingredients ready.Take juice from lemon and keep it ready.
  • Heat a pan with oil and add mustard seeds,Chanda dal,urad dal,dry red chillies, peanuts and sauté till lentils & peanuts turn brown in colour.
  • Add chopped green chillies,curry leaves along with turmeric powder and required salt.Switchoff the flame.
  • When it cooled down,add lemon juice.
  • Now add this mix in boiled rice and mix using a fork slowly.
  • Mix well and serve with any curry or dal.
