Khoba Roti Or Bread From Sandy Deserts Of Rajasthan

Khoba Roti is a very beautiful,classic and delicious full of ecastatic flavors,one of the most elegant and delightful flatbread straight from the Desert of Rajasthan .Rajasthani khoba roti is the prettiest of all Indian breads and The word khoba means cavity or indentation . This roti is traditionally made by punching the overall surface to create an interesting design..... ......According to me logical reason for this design is that these rotis are thicker than regular rotis,so I think to cook it evenly it's pinched overall.......Khoba roti are best cooked in chulha or sigri but it can be cooked on ordinary Tawa on gas....The tip for making Khoba rotis is cook it on low flame and apply lots of ghee......This recipe is a reflection of me my roots who I was, who I am and who I will be as I evolve with the food I discover,embrace and make them my own....I am very very excited to share recipe of very beautiful itself ,have crispy crust just like pie & soft from inside Khoba roti....If you are feeling a little adventurous in the kitchen it's time to make some Rajasthani Khoba Rotis..

Ingredients:i

  1. Whole wheat flour-3cup
  2. Ghee-1/2cup
  3. Salt to taste 

Procedure:

  • In a mixing bowl combine the flour,salt and 2ts ghee.Rub the flour between the fingers to mix well.
  • Add some water to knead a stiff dough.
  • Divide the dough into 2 parts and roll into a thick roti on a rolling pin.
  • Heat a tawa on low heat and put the roti on it.when one side is slightly cooked turn roti to other side.pinch the roti with fingertips uniformly throughout.
  • Again cook the roti on a tawa over a low flame till roti become golden brown from both the sides using a muslin cloth.
  • Apply 2-3ts gheeonthe roti and serve immediately with dal or any sabzi.
