Tea Time Vanilla Sponge Cake

A cake full of vanilla flavor....A cake close to my heart because This is my first baked cake & prepared with the freshest ingredients and whipped with thought & warmth.Isn't funny how simplest things in life bring you the greatest pleasure and sometimes best memories.I wanted to make a cake to serve with tea & was thinking what to make. It was summertime & I didn't want to spend much time in the kitchen,so I was looking for a simple recipe then I decided to bake basic vanilla cake..This cake is soft & moist & really good as teatime snacks.My hubby & I love this cake as we both have a sweet tooth and enjoy most of the deserts.   


Ingredients:

  1. All purpose flour-1 1/2 cup
  2. Castor sugar-1cup
  3. Curd-1cup
  4. Baking soda-1/2ts
  5. Baking powder-1 1/2ts
  6. Olive oil-1/2cup

Procedure:

  • Preheat the oven to 180'c.Grease & flour cake tin & setaside
  • Take curd in a bowl & mix castor sugar. Beat well & add baking soda and baking powder. beat again. Setaside for 5 minutes until you see bubbles in the mix.
  • Add vanilla essence and olive oil.mix well.
  • Finally add all purpose flour slowly and mix with wooden spoon.


  • Pour it into greased pan. Bake for 25 minutes.
Cool completely before cutting.
