Jodhpurit Kurkuri Besanwali Bhindi/Spicy Crispy Okra

Today i am sharing very popular,spicy aromatic dry and crispy okra curry originating from Jodhpur,Rajasthan But today popular throughout North India.This is a delicious twist to regular bhindi/okra and the word Kurkuri means crispy and Besan means gram flour.Basically in this curry okra is marinated in spices and coated with gram flour then deep fried for a satisfying crunch.To cut down the extra calories of frying and to save time of stuffing each bhindi/okra individually I have slit the okra into thin strips in lengthwise and stir fried with gram flour and spices.This is no onion no garlic curry and no other veggies added So there is less chopping work too:)The result is crispy spiced& masala coated okra And this is simply delicious.
This is a super quick recipe which requires ingredients mostly available at home and it is excellent side dish which goes well with rotis or Paratha.The only tips for making perfect okra is that Add gram flour  only when okra are chopped so that moisture will evaporate and you will get Kurkuri okra.This is my family favourite curry and a hit at my dinner parties.Let me warn you this okra is very addicting and I bet this lip smacking curry will dis appear in a flash.So the taste is awesome, method is very simple then what else do any one want....Put on your apron and Getgoing:)

Ingredients:

  1. Okra/Bhindi-15-18 pieces or 250 gm
  2. Gram flour-2 ts
  3. Oil-3 ts
  4. Garam masala-1/2 ts
  5. Fennel seeds-1/2 ts
  6. Asafoetida/hing-1/4 ts
  7. Dry mango powder/Amchur-1/2 ts
  8. Pickle masala-1 ts

Procedure:

  • Wash and pat dry the okra with clean cotton cloth completely otherwise okra will become sticky and don't taste good.Take stem out and slit in thin stripes lengthwise and keep aside.
  • Add gram flour and spices red chilli powder ,turmeric powder,coriander powder,salt Garam masala and pickle masala and mix well.In a nonstick pan heat oil,Add cumin seeds ,fennel seeds and asafoetida.When seeds began to pop ,Add chopped okra and cook for 10-12minutes stirring occasionally till it gets a little crispier on a medium flame.
  • cook for 5-7 minutes till crisp.
  • Add dry mango powder and mix again and turn off the gas.Serve hot with rotis/Paratha.
