Mooli Ka Saag/Dry Radish Leaves Curry

Radish is one of the few green vegetables available in Rajasthan in winters  Hense it is extensively used in Rajasthani cooking unlike in other parts of India where it is merely considered as salad.Mooli Ka Saag is a delicious curry originated from western Rajasthan which is made of radishes along with their leaves.Not too many people make this Saag because Normally Radish leaves are considered as a waste and thrown away.No vegetables should go to the waste that's why Don't toss those Radish greens.The leaves of the Radish with white Radish makes a excellent dish and This is one of the most simple,easy to prepare curry which tastes nice with Rotis/Parathas.
However what makes this Mooli Ka Saag truely special is the way Besan/Gram flour combines with radish white and greens,Gives a deep flavour,nice aroma and unique texture.I am completely in love with Mooli Ka Saag and this is my mom recipe again..The pungency of the Mooli with greens,the hotness of the chillies, crispyness of gram flour..So many flavour coming together in one dish.So if you never tried this Saag,you must try this delicious Saag.I am sure you gonna love this Saag...

Ingredients:

  1. Chopped radish white-1 cup
  2. Chopped radish greens-3 cup
  3. Besan/gram flour-1/2 cup
  4. Hing/Asafoetida-pinch
  5. Carom seeds-1ts
  6. Green chillies-1 ts

Procedure:

  • Heat oil in a nonstick pan,Add carom seeds.When seeds began to pop,Add ginger and green chillies and Sauté for 2 minutes.
  • Add white radish pieces and cook for 4-5 minutes.Then add radish greens.Mix well cover with a lid and cook for 3-4 minutes.Mix spices (Turmeric powder,coriander powder,red chilli powder,salt and gram masala)with gram flour in a bowl and Keepaside.
  • Then add spices gram flour mixture and cook for few minutes,While stirring occasionally.Serve immediately with Rotis/Parathas.
