Daal Ki Kachori/ Lentils Stuffed Puff-Pastry

It is almost Diwali as I write this post and I want to share this Daal kachori specially for Diwali.This is my favourite time of the year.This festival always brings happiness ,laughter,joy and lots of smiles on everyone's face.There is always something special prepared in the kitchen.At my home These kachori are must for Diwali menu and we all love these kachoris.My mom makes best of these and we just adore these kachoris.These crispy,flaky,deep-fried kachoris stuffed with savoury lentil stuffing and spices are so delightful .These smells great and taste fantastic too...Oh!I just love this spicy,irresistible and yummy Rajasthani delicacy,The luscious spicy filling is just amazing....Just writing about it makes my mouth water.
Kachori is Rajasthan most loved snack and believed to have originated in the city of Jodhpur and soon popular throughout Rajasthan.Now a days you can find this glorious Rajasthani delicacy in almost all the parts of North India and available in almost all the local shops,But it is still very popular morning breakfast or snack amongst Rajasthani's.These are pure joy when you combined this with zesty green chutney.You can prepare these in advance  and store,Just reheat them  before serving and If you don't like fried stuff Then you can bake these kachoris ,The taste will remain divine.These will be a breath of fresh air on your festive menu.So enjoy these yummy kachoris and Trust me if you love spicy food you can't stop at one kachori....So let's learn to make Daal Ki Kachori...

Ingredients:

  1. All purpose flour-2 cup
  2. Salt -1 ts
  3. Carom seeds-1 ts
  4. Oil for moyan-1/2 cup
  5. Moong daal/yellow lentil -1 cup
  6. Chopped coriander leaves-1/4 cup 
  7. Chopped green chilli-1 ts
  8. Dry mango powder-1 ts
  9. Garam masala-1 ts
  10. Gram flour/besan- 2 ts
  11. Oil for frying 

Procedure:

  • For Making Dough:Take all purpose flour,salt carom seeds in a large bowl and mix well.Now add warm oil and mix with your fingers.To ensure you have added enough oil/ Moyan to the flour ,Takea small amount of the flour and press it between your fingers.If the dough hold it's shape means you have added enough oil and if the dough crumbles away means you need to add more oil.Then add warm water little by little to form a tight but smooth dough.
  • For Making Stuffing:Soak the daal in enough water for minimum 3-4 hours.Drain the water and rinse well and keep aside.Heat oil in a pan ,Add cumin seeds and coriander seeds.When seeds began to pop,Add soaked daal and sauté for a while.
  • Then add chopped green chilli and coriander leaves,gram flour and spices (red chilli powder ,turmeric powder,coriander powder,salt,Garam masala,dry mango powder)Mix well and keep cooking till all the water from the daal evaporates.The stuffing should be totally dry.Remove pan from heat and keep aside.
  • For Making Kachori:After the dough has rested,Give it a quick knead.Take small portion of the dough and shape it into a round ball.Roll the dough ball a little and fill with 2ts of stuffing.Use your fingers to press the stuffing down.Bring the edges together and seal the filling inside.Now rolled filled kachoris lightly.
  • Frying:Heat oil in a kadai on high heat.Once the oil is hot,Drop the rolled Kachori carefully into the hot oil.Fry the Kachori on low heat to make them crispy till golden brown from both sides.
    Serve hot with zesty green chutney.
