Authentic Creamy And Nutty Malai Kulfi

Malai Kulfi is the creamy & flavorful dream of any Icecream lover in India and very close to western Icecream but it has many spices and nuts going into it.It is made with full fat milk which is boiled and cooked till it thickens like creamy Rabri.The addition of saffron cardamom powder,nuts and rose water makes Kulfi a treat.Every lick and bite of this luscious kulfi will make you fall in love with my favourite time of the year.I remember during long summer afternoons as soon as we heard the sound of trying-2 cycle bells of kulfiwala,All thought of sleep went out of the window and we rushed to the gate to get kulfi as it was our favourite thing to pass time...Creamy ,luscious,looks so pretty and saffron scented Kulfi.
Even on our way from school to home we used to stop at the kulfiwala cycle to have these creamy lovely sweet treat,I love those days:) Although my version of making Kulfi involve long process boiling milk and so on...But result worth the effort.So make sure you try this super sweet treat soon...Wishing you love and fun from 'Nia's mommy food trail '......

Ingredients :

  1. Full fat milk-1 litre
  2. Sugar-1/4 cup
  3. Cardamom-2to3
  4. Rose water-2 ts
  5. Saffron strands-5 to7
  6. Nuts-handful 

Procedure:

  • Heat milk in a wide bottom pan and bring to boil and allow the milk simmer on medium flame till it reached half of its original quantity.Keep stirring in between.
  • Add saffron strands,cardamom ,rose water and roughly chopped nuts and mix well.Keep stirring till it have rabri like consistency.Turn off the flame and allow to cool.
  • Pour the mixture into Kulfi mould and allow to set for 5-6 hours.Once the Kulfi sets,Demould It and serve chillled.
