Phool Makhana Ki Kheer/Foxnut pudding

Phool Makhana is also known as fox nuts or puffed lotus seeds is the white fruit obtained from lotus plant and looks like popcorn..It is very tasty and healthy and extensively used in Indian kitchen.Makhana is rich in protein and calcium and also a great choice for weight watchers as it's low in fat.One of the most famous dessert of pool makhana is the Kheer which is quite easy to cook and taste yum whether served warm or chilled just like any other Kheer.Generally this Kheer is prepared on during fast or festival as Prasad.
Although each day is a festivity when you are with your loved ones But nevertheless something delicious and rich always makes the festival more beautiful and meaningful So I tried this Kheer for my family on Janamastami and it was outrageously delicious.The method of making this Kheer is similar to other Kheer recipes just you have to roast the makhana in little ghee on low flame till they become crisp and golden,Then grind them corsely After that simmer in milk till thickness.The texture of nuts,The creaminess of milk ,The aesthetic touch of saffron The subtle taste of cardamom makes this a super dessert that lingers on your tastebuds.So try this healthy and heavenly delicious Kheer for your family,I am sure they will love it......

Ingredients:

  1. Makhana/Foxnuts-1 cup
  2. Milk-2 1/2 cup
  3. Cardamom-2 
  4. Saffron-5-6 strands 
  5. Ghee-2ts
  6. Almonds-10-12
  7. Cashew-10-12
  8. Sugar-6ts
  9. Raisins-Handful 

Procedure:

  • Heat ghee in a pan,Roast makhana and cashew till they become crisp and golden.Then remove them In a plate and keep aside.
  • Reserve1/4 cup makhana and grind the remaining coarsely.
  • Heat milk in a kadai and let the milk come to a boil.Add cardamom soaked saffron strands and ground powdered makhana  and also reserved whole makhana and Simmer till milk thickens and the makhana softens.
  • Lastly add raisins and sugar,Stir well.Garnish it with golden cashew and sliced almonds and serve warm or chilled.
