Guvarphali Kachri Ka Saag(Cluster Bean Curry with wild cucumber)

Cluster beans is a green colour beans and lesser known as sister of French beans.Cluster beans are crunchier than green beans and have distinct flavour and slightly bitter taste.There are two recipe for making this curry,In the first recipe beans are cooked with spices and In this recipe beans are boiled first then fried with spices.Cooking fresh beans is little labor because each beans need to be first stringed and chopped then boiled.These cluster beans also takes time to cook so I prefer to pressure cook the beans although my mom always cook these beans in pan by covering the lid.The key to making good cluster beans is boil the beans in proper way and sauté well with the Kachri and spices to bring out the earthiness.Lets straight away jump to the recipe...

Ingredients:

  1. Cluster beans-2 cup
  2. Kachri-1 cup chopped 
  3. Onion-1 small size 
  4. Dry red chillies-2
  5. Salt to taste 

Procedure:

  • Wash cluster beans and remove the head and tail part and then cut into small pieces.
  • Take a glassful of water in a pressure cooker and pressure cook it for 1whistle.Don't over cook and Drain the excess water and Keep aside.
  • Heat oil in a pan,Add cumin seeds and dry red chillies and when seeds began to crackle then Add chopped onions and sauté till translucent.Now add chopped Kachri and sauté till softens.When you add Kachri then no need to add tomatoes because Kachri has tangy flavor.
  • Add boiled beans and all the spices turmeric powder coriander powder,red chilli powder and salt.Mix well so everything is coated well and sauté for 2minutes.Lastly add Garam masala and dry amchur powder.Stir well and Switchoff the flame and serve hot with roti or paratha.
