Masaledar Guvarphali Ki Sukhi Subzi(Cluster Beans Curry)

Rajasthan,the land of Maharaja is famous for its rich culture,But what makes the state distinctive and popular is it's cuisine.We Rajasthani love our food and it is also evident in our preparations.One of the distinctive feature of the Rajasthani cuisine is the use of dried beans,berries,sun dried lentils.....Today I am sharing very healthy with characteristics earthy flavor Rajasthani delicacy 'Guvarphali  Ki Subzi '....Clusterbeans or Guvarphali is native to Rajasthan and consumed all over the North India.In Rajasthan people don't only use fresh cluster beans but also dry these beans and use them to make this delicious Subzi all over the year.Cluster beans doesn't taste flavorful on its own even it is slightly bitter in taste,So it is the magic of spices ,the method of preparation that makes the Subzi so delicious....Today I have made this Subzi by using dried cluster beans with potatoes in masaledar tangy tomato gravy,combining these two ingredients makes this curry really delightful .Traditionally it is prepared with kachri( Vegetable from cucumber family grown in Rajasthan)......Surprisingly not many people appreciate the taste of this Subzi even I myself is not a big fan of this healthy vegetable however I do enjoy it and My husband loves this subzi so it appears regularly in my kitchen.This Subzi is very low in calories and full of nutrition and Requires very minimal preparation and use only basic Indian cooking spices ,So you should include this in your diet.Try it once I am sure you will like it...


Ingredients:

  1. Dried cluster beans-1 cup
  2. Onion-1 medium size 
  3. Tomato-1 medium size 
  4. Chopped green chillies-1 ts
  5. Potato-1 medium size 
  6. Garam masala-1ts
  7. Dry amchur powder-1/4 ts

Procedure:

  • Wash and soak the dry cluster beans for 2-3 hours then drain and keep aside.

  • Heat oil In a pan.Add cumin seeds and hing or asafoetida then add finely chopped onions and sauté till translucent.
  • Then add chopped tomatoes and cook it till softens.Now add all the spices red chilli powder coriander powder turmeric powder and salt and cook it till oil separates from the sides.Then add chopped potatoes and soaked cluster beans,Mix well and cover the lid of pan,Cook it for 10-15 minutes and let the spices blend well in the Subzi.
  • Once the potato and cluster beans is nicely cooked then add Garam masala and dry amchur powder and mix well.Serve this Subzi with roti or Paratha.
