Kachri Ki Chutney (Wild Cucumber)

Have you ever heard about Kachri or Wild Cucumber ,Well this yummy chutney is made with them....A very delicious and sweet-tangy Chutney from the Rajasthani cuisine......Kachri is a wild variety of cucumber and extensively used in Rajasthani cuisine.Fresh Kachri resembles brown yellow small melons which grows wildly in the desert areas of the Rajasthan and seldom cultivated as a crop.Since fresh Kachri is rarely available outside Rajasthan,The use of dried Kachri or Kachri powder is more popular.If you are traveling to Rajasthan and you happen to walk around any of the local market you would find thick slices of dried Kachri sold in almost every grocery shop.

Ingredients:

  1. Sliced Kachri-1 cup
  2. Dry red chillies-2 
  3. Onion-1 small size 
  4. Cumin seeds-1ts
  5. Salt to taste

Procedure:

  • Wash and peel the Kachri and cut into round circles.Soak the dry red chillies into the little warm water.
  • In a blender add sliced Kachri with chopped onions,red chillies,cumin seeds and salt.Blend everything into a smooth paste.Add little water or buttermilk if required.
  • Store in a airtight container.This Chutney keeps well for a day at room temperature and for a week or longer if refrigerate.Serve this chutney with roti,paratha or toasted bread.
