Shaam Savera Koftas/Palak Paneer Koftas
Today I am sharing very tantalising and exquisite dish 'Shaam Savera kofta' which literally means evening- morning showing the contrast of colours in the koftas.Yes,Its Palak Paneer Koftas in a rich tomato gravyWith cottage cheese balls surrounded by spinach roundels and when you cut it into half hence the outer covering is Shaam and the inner white filling is Savera...How beautiful can this be!So when Shaam Savera is dunked into the rich creamy gravy then it actually becomes a signature dish and It gives a very eye pleasing look to dish. Yesterday night I made this & it was a new recipe I tried and was really happy that it completely stole the show at the dinner.My hunt for making something different and for promoting spinach in my kitchen made me land up with this preparation.This curry is really simple to make but it takes a little time to prepare because you have to first make up the dumplings then roll them and then fry them after it you have to make the gravy.This way this curry would come out'fried green dumplings with white sparkling in the ocean of rich ,tangy and creamy tomato gravy 'and then you feel all your devoted time is totally worth.If you really want to impress your guests then make this fantastic curry and serve with Naan or Paratha.So what are you waiting for.Come on treat your self and make this beautiful koftas right away.....
Ingredients:
- Spinach or Palak -2 cup
- Besan /gram flour-4ts
- Paneer-1 cup
- Tomato purée-1cup
- Chopped ginger and green chillies-1 ts
Procedure:
- Cook the spinach in boiling water for 4-5 minutes and drain out all the water.
- Heat oil in a pan,add besan and roast it for some minutes.Then add boiled spinach & salt and cook till moisture evaporates.
- Crumble the paneer, add salt and black pepper and make the balls out of it and Keepaside.
- Now take spinach mixture in your palms & flatten it .Place paneer balls on lt & cover it nicely with spinach mixture.
- Deep fry in hot oil till golden brown and crispy.
- Heat oil in a pan,Add cumin seeds,bay leaf, cloves,cardamom,cinnamon sticks & sauté for a while.Add chopped ginger and green chillies ,prepared tomato purée and spices(turmeric powder,coriander powder red chilli powder salt, Garam masala) and cook it for 4-5 minutes.Add 1ts malai & little water ,cook for some minutes & Switchoff the flame.
- Half the Koftas and put them in a gravy and serve hot.
