Paneer Pasanda/Cottage cheese curry
Paneer Pasanda is a Mughlai dish and 'Pasanda'is a Urdu word which means every one's favourite So as the name suggests this delicacy is adored by everyone who tastes it.This being a mughlai preparation uses exotic,fragrant spices and rich gravy and mostly accompanied with Indian flat bread Tandoori Roti or Naan.It is very delectable and exotic dish made with fried Paneer cubes stuffed with dry fruits and served in an aromatic rich creamy gravy.The consistency of the curry should be neither to thick or too thin.In this dish paneer is typically cut into triangles shape but you can also cut into small cubes.........
I always wonder what it would be like to be a Nawab,To live a life of extravagance grandeur and exaggerated luxury!The majestic palaces,music dance and moreover their love for food.How would their Bawarchikhana be and what all secret spices in their kitchens ,infused the classic and most wonderful dishes with the everlasting taste and traditions!The dishes so out of the world that all together a different style of cooking was evolved from that era.The tradition is still followed.So it would b the Nawab who influenced their Khansamas to make wonderful dishes...One such jewel from their kitchen is'Paneer Psanda' and It is super delicious dish & Very fancy dish to serve your guests.This is my first exotic paneer recipe that I learnt during my college days and this delicacy gives me praise every time I make it.So this is one such dish you should include in your menu and feel like a Nawab.....
Ingredients:
- Paneer-250 gm
- Corn flour-3ts
- Onion purée-1/2cup
- Tomato purée-1/2cup
- Chopped ginger and green chillies-1ts
- Cashew nuts-1/4cup
- Raisins-6-7
- Oil for frying
Procedure:
- Cut the paneer into triangles pieces or shape of your choice & give a slit to each piece the the centre so that it create a pocket in every piece.In a bowl,mix together greeted paneer,raisins,salt,black pepper & chopped cashew nuts.Now stuff each paneer with this stuffing.
- In a small bowl take corn flour and add little water & make a paste.Then dip each paneer triangles in the batter & shallow fry them in hot oil till golden brown.
- To cut the calories I just grilled the paneer triangles or cubes,It's up to your choice.To make gravy,Heat oil in a pan & Add bay leaf,cloves,cardamom cumin seeds,cinnamon sticks & sauté for a while.
- Add chopped ginger and green chillies.Then add onions purée and sauté till light brown.
- Now add tomatoes purée &spices( turmeric powder,coriander powder,red chilli powder,salt,Garamond masala) and cook till oil separates from sides.Add cashew nut purée (blend soak cashew nuts with milk)& sauté for a while.
- Add fried paneer triangles and little cream.Garnish with chopped coriander leaves and serve hot.
