Mexican bean salad is a healthy vegetables salad with beans &herbs.I love this hearty & filling salads,more like meal type salad.A perfect mix of fresh & juicy vegetables with lot of flavour from herbs & spices,beans for a protein boost,corn for extra volume & nutrition.This salad is so fresh,juicy&flavourful ,I promise you'll love it !!!
Ingredients:
- Chopped capsicum-1/4cup
- Boiled red kidney beans-1cup
- Boiled corn-1/4cup
- Chopped tomatoes-1/4cup
- Chopped spring onions-1/4cup
- Lemon juice-2ts
- Olive oil-3ts
- Red chilli powder-1/4ts
- Salt to taste
Procedure:
- In a large bowl combine beans, corn ,onions capsicum,tomatoes,chopped coriander leaves .
- In a small bowl add olive oil,lemon juice,salt,red chilli powder and whisk together.
- pour dressing over beans and toss to mix .Cover and refrigerate at least one hour to blend flavour and serve chillled.
