Kesari Seviya Kheer/Indian Rice pudding
Something that every Indian knows how to make and love to savour......Something that kind of a prerequisite for all festivals....Something I am sure you must have made innumerable times too...And so I did.Seviyan kheer is a popular Indian dessert which is made in every Indian household for special occasions ,festivals ,celebrations ....And made with Seviya or vermicelli & milk&sweetened with sugar and simmered and reduced to form a palatable decoction you can't resist. and it can be served either warmed or chilled.When Seviya is roasted in ghee it gives a nice aroma and its signature taste to the dish.
This is my husband favourite dish and Actually we all are kheer lovers and never need a reason to make it..It's kind of comfort food for me,so today I decided to make the Seviya kheer and It is so satisfying when a little effort brings so many & so huge smiles:) The beauty of kheer is in its simplicity and simple it is that it can be made in various ways with tapioca pearls,rice,paneer and every region in India has a different name for it ,In South India it's called as Payasam.In short you should try this once and you will be hooked for life.....
Ingredients:
- Milk-500 ml
- Sugar-1Ts
- Ghee-2 ts
- Seviya-3/4cup
- Saffron strands-7-8
- Chopped nuts & raisin
Procedure:
- Heat ghee in a pan,add Seviya and fry till golden brown .
- Pour the milk and let it come to a boil.Lower the flame & let the milk simmer for 10-15minutes till Seviya well mixed with milk.
- Add saffron strand ,raisins and sugar,Mix well.Switchoff the flame.
- Garnish with chopped nuts and serve hot/warm/cold.
