The most exotic vegetarian dish after paneer is suppose to be the one and only Mushroom .Wheather it's a soup or a curry mushroom has its unique texture that blend with almost everything leaving a exotic flavor.One such amazing delicious dish made with mushroom is 'Tawa Mushroom 'which is a comforting & extremely flavourful dish made on big tawa with lots of spices like Mumbai Pav-bhaji that's why it is called tawa mushroom masala.Well,it can be made in a Kadhai too depending on the availability of the utensil.
Actually we all need easy peasy meal So if you need quick and flavourful curry then simply go for it,This curry is just so simple and made with basic ingredients that are anytime available at home with just one tbsp oil.In this recipe i cooked mushrooms in a spicy onion tomato based gravy,Medium sized mushroom cut into pieces and mixed with various spices and teemed up with tomatoes and roasted to get a deep brown colour and smoky flavor.The aroma of spices cooked on medium heat with onion and tomatoes makes it superbly delicious.It can be enjoyed as a dish with your meal or just have as a snack with a dash of lemon juice over it.So make it and do let me know how it turns out.
Ingredients:
- Mushrooms chopped-1 1/2 cup
- Onion-1 large size
- Tomato-1med size
- Chopped Ginger and green chillies-1ts
- Pav-bhaji masala-1/4 ts
- Oil-1 ts
Procedure:
- Wash and cut mushrooms properly.
- Heat a nonstick or heavy iron tawa on low flame.Add a teaspoon of oil,cumin seeds,hing /asafoetida.When seeds start to crackle add chopped ginger and green chillies,sauté for a while.Add chopped onion and cook till turn golden brown in colour.Then add chopped tomatoes and cook till softens.

- Add spices salt,red chilli powder,coriander powder,turmeric powder,Pav bhaji masala and cook till oil separates from sides.Add chopped mushrooms and cover it with lid and cook for 10-15 minutes.Switchoff the flame.
- Garnish with chopped coriander leaves and serve hot.
