Dessert after a meal always has a special place in Indian cuisine.Today let me present to you one of the best desert from Rajasthan Moong Dal Halwa and It is a classic, rich and mouth watering Rajasthani dessert and it surely needs a lot of ghee but that's what make this dessert unique and so delicious....Some dishes taste best when cooked by certain people and this is surely one of them.....This is my mother in law signature dish,My mother in law prepare this in kg for family on Diwali.She does everything the traditional ways like Soak the dal first then wash it and then grind it,roast the dal in ghee on low flame......When dal is roasted,the aroma will fill up your home,captivating all your senses and making your mouth watery..That is the essence of Diwali to me...Believe me it is bowl-licked-clean kind of dessert for me and I seriously can't resist this Halwa and I always look for an excuse to eat it.
This halwa takes a long time and lots of patience to sauté the dal and it will require a little extra ghee too.Although this halwa process is very complex but the end result worth the time,It tastes superb and the good thing about this is that it can stay fresh for a longer period.Whenever you want to eat this Halwa just pop it in the microwave and try not to heat in the regular pan because it has tendency to stick to the bottom and you don't want to ruin the taste of your Halwa so warm it in the microwave or heavy bottom pan.Constant stirring is the secret of this delicious Halwa....So to complete a perfect meal try out this royal Halwa...Every spoon you eat you crave for more....It's so divine....
Ingredients:
- Split Yellow lentil -1cup
- Sugar-1cup
- Khoya-100gm
- Ghee-1cup
- Nuts-1/4cup chopped
Procedure:
- Soak the moong dal in water for 6-7 hours.Drain water and grind the moong dal coarsly.
- Heat ghee in a thick bottom Kadhai.Add moong dal paste and keep stirring it on slow flame till the dal is brown in colour.
- Add khoya and mix again for 10-20 minutes.Switchoff the flame and keep it aside.
- To make sugar syrup,mix sugar with 1cup of water and bring to boil.The consistency of syrup should be 1string.Cool the syrup.
- Add dal mixture and mix well.Add cardamom powder and mix well.
- Garnish with raisin,chopped nuts and serve hot.
