Baingan Ka Bharta Or Roasted Eggplant Curry

Bharta is a traditional Indian curry particularly famous in rural India.The word 'Bharta'refers to the dishes in which the ingredients are roughly mashed either before or after the dish is prepared.Bhartas are north Indian in origin and made from all sorts of vegetables.Baingan Ka Bharat is the most alluring way of presenting baingan and must on Punjabi menu.It is made with roasted peeled and mashed baingan simmered in onion-tomato based deliciously spiced sauce.This curry is warm,cozy,healthy and mouth-wateringly good and very easy to make.The mouthwatering smoky flavour that comes from charring the baingan is what makes this dish so amazing.
Traditionally the baingan are roasted in a Tandoor which is burned with coal then cooked in Indian spices.At home we don't have Tandoor So we usually roast the baingan on gas stove.Although it's not as good as Tandoor one but still it gives the smoky taste.It goes well with phulkas/Roti and your favourite Dal dish.For someone who hated brinjals all through my childhood...Yah,As a child I was never fan of baingan,l don't know why but somehow it didn't look So appealing to me.My present love for Baingan Bharta is something that surprise me no end .I don't recall when I tried making this first or whether I ate it at a restaurant that led to this love.Try it just once I am sure you will love this as much as I do.....

Ingredients:

  1. Baingan or brinjal-1large size
  2. Chopped onion-1large size
  3. Chopped tomatoes-2small size
  4. Veg oil-3ts
  5. Malai-1ts
  6. Chopped green chilli and ginger-1ts

Procedure:

  • Put oil on the surface of brinjal and roast the brinjal on a medium flame till well cooked.Cool the brinjal,peel and mash.
  • Heat oil in a pan and add cumin seeds.When seeds began to crackle add chopped ginger and green chilliest and sauté.
  • Add chopped onion and cook till turn brown in colour. Add chopped tomatoes and spices(red chilli powder,salt,coriander powder,turmeric powder and Garamond masala) and sauté till masala is well cooked.
  • Add malai or fresh cream.Then add mashed brinjal and mix well.
  • Garnish with chopped coriander leaves and serve hot.
