Rajasthan Delight Dal-Bati Churma

Dal -bati Churma is a traditional Rajasthani dish & Rajasthani food is incomplete without it. When it comes to authentic and traditional Rajasthani food then the first thing comes to everyone mind is definitely DalBati Churma...............Three dish in one and This 3in1 delicacy is a typical Rajasthani treat and It is the king of Rajasthani food.The people of Rajasthan specialise in serving sweet and savoury dishes in combination that steal the heart and delight the tastebuds.It is one such traditional combination..............Being Rajasthani this is one such dish I have grown up eating all my life.It is an esteemed part of every Rajasthani household.Traditionally these Batis are made in clay oven or under the flame of cow dunk that's what gives the specific earthy taste to Batis.....Batis are crispy,melt in mouth,thick&baked whole wheat bread roll drizzled with lots of ghee...... ...  Dal known as Panchmel or PanchKutti Dal as it is prepared by using 5 type of mixed lentils( Moong Dal,Chana Dal,Urad Dal,Toovar Dal & Moth Dal ) & is simply soup of mixed lentils&cooked with ghee and spices yet very delicious & aromatic and the Churma is a sweet stuff made from Batis and the combination of 3 is known as Dal Bati Churma.
Festivals brings back a ton of memories for me from different phases of my life.My Mom who cooks so many lavish dishes that I still remember especially on Lohri ,she makes this awesome delicacy which was celebrated in quite Punjabi style at my home and I am talking about huge lawn party,Bone fire,Dj and We used to walk together with the family around the bone fire singing "Sunder Mundriye ho! And eat Rewri,Peanuts Gajjak and Dal-Bati.I absolutely loved that time of the year spreading the sense of joy and happiness all around.This is my family recipe of dal-bati which my mom has been cooking from our childhood.It feels amazing to cook a dish just like your mom does ...........I would suggest cooking dal- bati only in ghee to get the authentic taste and This is the only key to making more delicious DalBati ,The more ghee you add,The more scrumptious DalBati would.............Make this today for someone you love to take them on a sinful trip with you and I wish you will enjoy this authentic dish as much as I do now!


Ingredients:

  1. Moong dal/Green gram dal-1cup,
  2. Chana dal/ Bengal gram dal-1/3cup
  3. Moth dal/Moth bean split1Ts
  4. Urad dal/Black gram lentil -1/2Ts
  5. Toovar dal/Pigeon peas spilt-1Ts
  6. Wheat flour-3-4cup
  7. Melted ghee-1cup

Procedure:

For the Panchmel Dal-:
  • Soak all the dal for  1-2 hours.Pressure cook for2-3 whistle or till the dal are cooked.
  • Heat a Kadai with oil and add cumin seeds.When seeds began to crackle add whole red chillies,cloves, asafoetida,bay leaves.
  • Add green chillies,ginger and onion  and sauté till onion turn golden brown in colour.Add chopped tomatoes and spices ( salt, turmeric powder,red chilli powder, coriander powder,Garam masala) and cook for 3-4 minutes.
  • Add the boiled dal and 1ts malai and some water to adjust the consistency of dal.
  • Garnish with chopped coriander leaves and serve hot.
  • For the Bati-: 
  • Take wheat flour in a bowl and add ajwain seeds, 3ts ghee and salt .
  • Knead well for 5-7min and make a stiff and smooth dough.

  • Divide the dough into 8-10 equal parts and make a medium size ball of dough.
  • Preheat the oven to200'c and bake the bati for 20 minutes.

  • Arrange the bati on a serving plate.Break each bati into two pieces and crushed it coarsely,Add Dal and little bit sugar if you like then pour melted ghee with Churma on side.
  •  Churma-:
  • Grind the batis in the blender into a fine powder.You may need to follow this step for a couple of times to get perfect texture.Add melted ghee,almonds,raisins cardamom powder ,sugar and mix well.
    Garnish with rose petals and serve.
